Pink Lady Apple with biscuits and sabayon


Ingredients

Pink Lady Apples: 6
Unsalted butter: 20 grams (s)
Powdered sugar: 80 grams (s)

For the custard:
Egg (s): 2
full cream milk: 5 centiliter (s)
Powdered sugar: 70 grams (s) Speculoos: 6


Recipe: Pink Lady Apple with biscuits and sabayon

Peel apples and cut into 4 or 8.
In a skillet, add sugar, add butter and apples, then leave 10 minutes over low heat.

Prepare a water bath. Break eggs into a bowl, add sugar and beat on the water bath until getting a thick and creamy texture. Add the cream and continue whipping until the mixture cools.

Arrange the apples in glasses, put biscuit crumbles over them and cover it with the sabayon. Brown the top with the torch.

ITINERARY Antibes - Vallée de La Loire

2008
Travelling around 2.000 km during 16 days


I took a 2-weeks french course in Antibes, end of May 2008. I loved it very much!!! It was sunny all the time, but not hot.

The experience was worthwhile!!!! A very nice school without any formality. As much as the school, Antibes is very beautiful and plaisant to stay in. Certainly it is a place to considere when choosing a french school for foreigners. Super!!!

LOURMARIN (Luberon)


Listed as "one of the most beautiful villages in France", Lourmarin nestles in the middle of vinyards, olive groves and almond trees.
A very animated village in the summer due to its numerous cafe terraces, restaurants and boutiques, Lourmarin attracts many visitors.
In the village you will notice the typical Mediterranean architecture in its winding narrow streets, lovely old restored houses, and well shaded public squares where you can immerse youself in the gentil Provençal ambience.

AMBOISE (Vallée de la Loire)


Loire Valley - the region with the largest concentration of castles in the world, more than 300 - it's crazy!!! - it is known as the Garden of France. When we have been there in 2008, we've chosen just a few castles because, first, each entrance costs at least 9,50 euros, second, all of them are fantastic, but all similar. After having seen some, you get tired of seeing castle rooms and furnitures.

Chenonceau is one of the best ones, in my point of vew. We have visited the Amboise Castle, because that was the city where we have stayed 3 nights, Villandry due to its famous gardens, Cheverny due to its different style, and others, just by its exterier. Chambord, the most famous, has not been visited because a couple has told us to not go, since it is crowded with tourists all the time and has not much furniture.

Loire Valley, known as "the Garden of France", was the favorite residence of Kings of France during the Renaissance period. They made this peaceful countryside the setting for their dreams. Thus was born the Renaissance in France. The kings surrounded themselves with the greatest artists and architects of this era. It is worth driving at random in Loire Valley, Touraine, Sologne, Poitou, Berry and discover castles, castles ,castles ...more castles.
Amboise is a very nice small town and it is located near to all main castles. The Ibis Hotel is a good choice, since it offers not expensive tarifs and it is located not far from downtown (60 euros). Amboise is very pleasant, full of good restaurants for any pocket and charming gift shops.
Amboise was stunning. Perched above the city this castle's design has many unique features. There is an enclosed exit/entryway that is in a spiral form without the stairs- just a smooth stone walkway spiraling downward. In medieval times this was used for people that were on horseback, making it much easier on the horses to travel up & down to the castle.
Leonardo da Vinci ended his life in France in the Clos Luce Manor house in Amboise. The King Francois I during his wars in Italy was seduced by the New Art of Renaissance and invited Leonardo da Vinci to France in 1516. Leonardo da Vinci was honored with the King’s benefaction. The master was given the "Manoir du Cloux", today "Clos Luce Manor", nearby the Royal Castle of Amboise and a pension of 700 golden crowns per year. The King Francois I asked for nothing in return, only the pleasure of listening to Leonardo da Vinci converse. The king could come secretly in the Clos Luce using an underground passage connecting the manor to the Royal Castle, giving the King a direct access to the home of the master Leonardo da Vinci.
